Vintage Characteristics » A rainy winter and mild spring were followed by one of the driest summers in history, with more tan 100 consecutive days without rain. The lack of precipitation caused a delay in ripening due to the stressful conditions, while at the same time allowing the grapes to reach the end of their vegetative cycle in perfect health.
Vinification » After a selective hand-harvest of the grapes at their optimal ripeness, a traditional vinification process took place with an extended maceration in order to emphasize the varieties characteristics. Fermentation took place in stainless- steel tanks at a cotrolled temperature of 26 C and upon completion of malolatic fermetation, the wine went on to age in barrels.
Ageing » 4 months in French and American oak barrels.

Alcohol» 14% Vol.
Colour » Deep cherry red with a violet rim.
Nose » Ripe black fruits, marmalade, plum, with hints of spice and oak.
Palate » Flavour, full-bodied, and fresh with a pleasant mouth-feel with a finish marked by fine tannins.
Pairing » Ideal for pairing with red meats, game, roasts, poultry, white meat. Serrano ham, charcuterie, cured cheeses and blue cheese.
